Slow Cooker Chicken Taco Meat

Last night we made Quesadillas with this AMAZING chicken taco meat recipe that I'm officially obsessed with! The best thing about it, is that it is rediculously easy to make! Mexican food always sounds good (at least to me), so why not try something that tastes fantastic and is easy to make!?

  • 5-6 Medium Chicken Breasts (frozen)
  • 1 Medium Jar of Pace Salsa (16 oz.)
  • 2 Cups Brown Sugar
  • Put frozen chicken breasts in crock pot. Turn crock pot on high heat. Pour half of the jar of Pace Salsa over chicken, and sprinkle 1 cup brown sugar over the top.
  • Leave in Crock Pot for 6 hours on high heat
  • Take out of crock pot and shred chicken. Get rid of liquid in crock pot. After shredding chicken put back in crock pot. Pour remainder of salsa over the shredded chicken as well as 1 cup brown sugar.(I did 1/2 cup brown sugar after shredding and it tasted great, so if you're wanting to cut back on sugar try 1/2 cup)
  • Cook on low for one hour. Stir chicken so that it is covered by the salsa and brown sugar mixture. Cook for one more hour on low after stirring. Serve warm!!!

I sauteed some onions, chopped up cilantro and tomatoes, and grated some Montery Jack Cheese. Put it all on a flower tortilla and made a yummy quesadilla!! It's also very good for tacos or even enchilada meat!! Serve with chips and homemade guacamole!
