A Little Rain Shower

As if I weren't baby hungry enough... This past weekend I co-hosted a baby shower for the most adorable mommie to be! Saturday was filled with diapers, the sweetest tiny baby boy clothes, and enough sweets to put you in a sugar coma! This was the hardest part for me because the hubs and I decided to go on a no sweets kick for the entire month of May...hahahahahahahaha.....I may have tried a cookie or four at the shower but what happens with the girls stays with the girls right?? On a for real though doing no sweets (with a slip up or two) has made me realize how much crap I eat without noticing it, and just cutting sweets I've already noticed it being a LOT easier to trim up....DUH right? So far it's been a great self control exercise for me.. Try it!

So the theme was a little rain shower, and we had a little too much fun with it ;) 

Muddy Brownies:

1Pkg German Chocolate Cake Mix
1 14oz. bag of caramels
3/4 cup melted butter
1 8oz bag of Heath Toffee Bits
1 5 3/4oz. can evaporated milk
1 12oz. bag of milk chocolate chips

Grease 9x13 pan. Pre-heat oven to 350 degrees. In a large bowl, mix together cake mix, melted butter, and 1/3 cup of evaporated milk. Press half of this mixture into a 9x13 pan. Bake 6 minutes.

Meanwhile melt caramels and remaining evaporated milk in a small saucepan over medium to low heat, stirring often. Remove brownies from the oven after 6 minutes and sprinkle half of the bag of toffee bits. Pour melted caramel over toffee bits. Sprinkle half the bag of chocolate. Spread the remaining batter on top. (This is easiest if you take pieces of the batter, flatten each individual piece in your hands and place on top.) Sprinkle the remaining toffee bits and chocolate chips on top. Bake 20 minutes. Cool on wire rack and then refrigerate for 3 hours before serving. Makes 24 brownies

Rainbow Fruit Salad

Cloudy Coconut Fruit Dip:

4 oz cream cheese
1/2 (15oz) can Cream of Coconut 
(Not Coconut milk! Find this in the aisle with the margarita and drink mixers.)
1/2 (8oz) tub Cool Whip

Mix all ingredients and dip away!! (This dip is so good you'll have to remind yourself to to eat fruit with it!)
