Stretching out the Season of Giving





Happy Sabbath and New Years Eve! I feel like this year there was so much going on that Christmas just flew by! Does anyone else feel the same way!? I mean it seems like it just went by too fast. With all the prep for Christmas and making gifts, I got to thinking about how giving everyone can be. From Thanksgiving to Christmas, everyones' hearts are full and quick to give. Usually once the holidays come to a close, I need a break and retreat inside from the cold and just focus on my family. This year I want to challenge myself to stretch out the "Season of Giving" a little longer with some yummy winter gifts from the kitchen. Oriental Trading Company helped make this possible by providing some amazing products but all thoughts and ideas are my own.

I want to share with you two delicious recipes that are guaranteed to warm up a chilly day for a friend in need. Both recipes are from my Dad who really shines when it come to not only giving to others but baking. He is an AMAZING baker!


Ginger Snaps (Printable Version)

3/4 Cup butter (room Temperature)
1 Cup Sugar
1 Egg
1/4 Cup Molasses
2 Cups Flour
1/4 Tsp Salt
2 Tsp Baking Soda
1 Tsp. Cinnamon
1 Tsp. Ground Cloves
1 Tsp. Ground Ginger

Preheat oven to 375 degrees. Cream butter and sugar together. Slowly add egg and molasses and continue to cream together. Sift in flour, salt, baking soda, cinnamon, cloves, and ginger. Chill one hour. Roll 1 inch balls in sugar and space out on a lightly greased cookie sheet or uncreased parchment paper.

Bake in oven for 8-10 minutes. (for softer cookies bake closer to 8 minutes). Makes about 3-4 dozen.


Cherry Apple Pecan Cake (Printable Version)

2 Cups Sugar
1 1/2 Cups Vegetable Oil
4 Eggs well beaten
3 Cups Peeled and Grated Apples ( 4 medium apples or 7 small apples)
1 Tsp. Vanilla Extract
3 Cups Flour
3 Tsp. Baking Powder
1 1/2 Tsp Baking Soda
1/2 Tsp Salt
1 Tsp Cinnamon
1/2 Cups Chopped Pecans
1 Small Bottle Merichino Cherres Diced

* First Chop Nuts, Peel and Grate apples, and dice cherries

Preheat oven to 350 degrees.  Cream together sugar and oil. In a separate bowl combine flour, baking powder, baking soda, salt, and cinnamon. Combine dry ingredients with wet. Add apples, pecans, and cherries. Stir until combined. Fill loaf pan halfway.

Bake for 1 hour and 5 minutes. Check at 30 minute mark

Makes 2 regular sized loafs or 3 small.
